Croquettes from surplus sweet potatoes
The Belgian company "De Aardappelhoeve" grows, sorts and packages 300 ha of potatoes for Belgian retail, both conventional and organic. Recently the company has been growing sweet potato for the Belgian market. The potatoes are selected by size, the too small and too large potatoes cannot be sold. This means a loss of 200 tons of sweet potatoes on an annual basis. A new application is being sought for these quantities within the Food From Food project. A sweet potato croquette is initially thought of. In addition, it is interesting to develop a semi-finished product that can be used in many recipes.
